The Institute of Hotel Management, Catering Technology and Applied Nutrition, Mumbai was founded in the year 1954 under the leadership of Late Smt. Lilavati Munshi by All India Women's Central Food Council. Late Smt. Lilavati Munshi and her group of courageous women which included Smt. Leela N Jog and Smt. Homi J H Taleyarkhan established a chain throughout the country called Annapoornas (restaurants), but mainly in metropolitan cities to prepare and sell not only economic but nutritionally sound snacks and foods.
The aim was to enhance the nutritional status of the average cereal diet to a more balanced diet. The main challenge was to find out the trained personnel to run these Annapoornas on a self-financing basis. This is how the training institute - IHM Mumbai was established. Since IHM Mumbai is considered as the parent institute in India, it ensured other such institutes to spring up in other parts of the country. In 1963, 3 more Regional Institutes were established in New Delhi, Chennai, and Calcutta. At present, there are 21 institutes of Hotel Management affiliated with the National Council for the Hotel Management and Catering Technology, New Delhi.

The institute has many schools, hospitals, and restaurants in its vicinity. It has a well-equipped computer lab that facilitates paperless assessments to take place.
